Ingredients
- eggs 2 pieces
- spinach 120 g
- oil 3 g
- whole wheat bread 25–30 g
- salt, pepper
Instructions
- In a non-stick pan, put the oil and add the well-washed spinach. Sauté it over medium heat for 3-5 minutes until it wilts. Season with salt and pepper (and a little garlic if you prefer).
- Prepare the eggs according to preference: poached in simmering water with a splash of vinegar, or fried sunny-side-up in a non-stick pan.
- Serve the eggs over the bed of sautéed spinach. Add the tomatoes on the side for freshness.
