- zucchini 120 g
- pepper 80 g
- cauliflower 120 g
- light feta 40 g
- Greek yogurt 2% 120 g
- oil 3–4 g
- lemon, verdeață, salt, pepper
Instructions
- Cut the zucchini, pepper, and cauliflower into equal pieces. Place them in a baking tray, drizzle them with olive oil, and season with salt and pepper.
- Bake in a preheated oven at 200°C for approximately 20 minutes, until the vegetables are browned but maintain a slightly crunchy texture.
- While the vegetables are in the oven, mix the Greek yogurt with lemon juice and finely chopped herbs.
- Serve the warm vegetables, sprinkled with crumbled light feta and add the creamy yogurt sauce on top.
