- tomatoes 150 g
- bell pepper 80 g
- onion 30 g
- olive oil 5 g
- whole wheat bread 50 g
- salt, pepper, paprika.
Instructions
- Dice the onion, bell pepper and tomatoes. You can peel the tomatoes if you prefer a smoother texture.
- In a pan, heat the olive oil and sauté the onion until translucent. Add the bell pepper and cook for another 2 minutes.
- Add the tomatoes and let them cook until they form a thick sauce (about 5-7 minutes).
- Season with salt, pepper and paprika, then break the eggs directly into the sauce.
- Let them cook without stirring too much until the whites are set. Serve immediately with toasted whole wheat bread.
