Instructions
- Cut the pepper and mushrooms into thin slices or cubes. Sauté them in hot oil for 4-5 minutes until the mushrooms release their water and become slightly golden.
- Beat the eggs with salt and pepper. Pour the mixture over the sautéed vegetables.
- Cook over low heat, covered, until the eggs are set.
- Serve warm with a slice of whole wheat bread.
