- chicken breast 170 g (raw)
- romaine lettuce 150 g
- parmesan 12 g
- Greek yogurt 2% 70 g
- lemon juice 10 g
- Dijon mustard 5 g
- garlic 3 g
- anchovy fillet 5 g (optional)
- salt, pepper
- whole grain croutons 20 g (optional)
Instructions
- Cut the chicken breast into strips, season it and cook it on a grill or in a non-stick pan until golden.
- Wash and tear the romaine lettuce leaves into suitable pieces, placing them in a large bowl.
- In a separate container, prepare the dressing: mix the Greek yogurt with Dijon mustard, lemon juice, crushed garlic and finely chopped anchovy fillet (if you choose to use it).
- Pour the dressing over the lettuce and mix well to evenly coat each leaf.
- Add the warm chicken, sprinkle the grated parmesan and, optionally, the whole grain croutons.
