Instructions
- Finely chop the onion and sauté it in the 3 g of oil with a little water, until it becomes translucent. This step allows the flavors to be released without degrading the oil quality.
- Add the carrot and potato cut into small cubes. Sauté them together with the onion for 2-3 minutes to intensify the sweet taste of the carrot.
- Pour the water (330-350 ml) and add a pinch of salt. Let the vegetables simmer for approximately 10 minutes, then add the broccoli florets. Broccoli requires a shorter cooking time (5-7 minutes) to preserve its vibrant color and nutrients.
- Use an immersion blender to transform everything into a fine, dense cream.
- After turning off the heat, incorporate the yogurt and freshly ground pepper. The yogurt will balance the earthy taste of the green vegetables, providing a velvety texture.
