- Chicken breast 120 g
- Quinoa 50 g
- Cucumber 80 g
- Bell pepper 80 g
- Carrot 60 g
- Green salad 40 g
- Olive oil 5 g
- Lemon juice 10 g
- Salt and pepper to taste
Instructions
- Wash the quinoa well in several waters, then boil it in water, according to the time indicated on the package, until it becomes tender and slightly aerated. After boiling, let it cool slightly for a few minutes.
- Cook the chicken breast on the grill, in a non-stick pan or in the oven, until it is well seared and lightly browned on the outside. After it is cooked, cut it into slices or cubes.
- Wash and prepare the vegetables. Cut the cucumber and bell pepper into strips or cubes, grate the carrot and tear the lettuce into suitable pieces.
- Place cooked quinoa, lettuce, fresh vegetables and cooked chicken in a bowl.
- Drizzle everything with olive oil and lemon juice, then season with salt and pepper to taste. Mix gently before serving or keep the ingredients arranged separately for a more pleasant appearance.
