Ingredients
- turkey breast 130 g
- peas 180 g
- olive oil 6 g
- lemon juice 1–2 tsp, optional
- salt
- pepper
- fresh dill, optional
Instructions
- Season the turkey breast with salt and pepper.
- Cook it on the grill, in a non-stick pan or in the oven, until it is well penetrated and lightly browned. After cooking, let it rest for 2 minutes, then slice it.
- Boil the peas in lightly salted water for 5–7 minutes, until tender.
- Drain the peas well and puree them with a blender or vertical mixer together with half the amount of olive oil until you get a smooth puree. If needed, you can add 1–2 tablespoons of warm water for a creamier texture.
- Season with salt and pepper. If you want, you can add a little lemon juice for freshness.
- Place the pea puree and the sliced turkey breast on the plate.
- Add the remaining olive oil and, optionally, some fresh dill before serving.
