Ingredients

  • turkey breast 130 g
  • peas 180 g
  • olive oil 6 g
  • lemon juice 1–2 tsp, optional
  • salt
  • pepper
  • fresh dill, optional

Instructions

  • Season the turkey breast with salt and pepper.
  • Cook it on the grill, in a non-stick pan or in the oven, until it is well penetrated and lightly browned. After cooking, let it rest for 2 minutes, then slice it.
  • Boil the peas in lightly salted water for 5–7 minutes, until tender.
  • Drain the peas well and puree them with a blender or vertical mixer together with half the amount of olive oil until you get a smooth puree. If needed, you can add 1–2 tablespoons of warm water for a creamier texture.
  • Season with salt and pepper. If you want, you can add a little lemon juice for freshness.
  • Place the pea puree and the sliced ​​turkey breast on the plate.
  • Add the remaining olive oil and, optionally, some fresh dill before serving.
