Ingredients

  • eggs 2 pcs (110 g)
  • tomatoes 150 g
  • bell pepper 80 g
  • onion 30 g
  • olive oil 5 g
  • whole wheat bread 50 g
  • salt, pepper, paprika.

Instructions

  • Dice the onion, bell pepper and tomatoes. You can peel the tomatoes if you prefer a smoother texture.
  • In a pan, heat the olive oil and sauté the onion until translucent. Add the bell pepper and cook for another 2 minutes.
  • Add the tomatoes and let them cook until they form a thick sauce (about 5-7 minutes).
  • Season with salt, pepper and paprika, then break the eggs directly into the sauce.
  • Let them cook without stirring too much until the whites are set. Serve immediately with toasted whole wheat bread.
