Ingredients
- whole wheat tortilla 60 g
- eggs 2 pcs (110 g)
- spinach 60 g
- light feta 30 g
- olive oil 3 g
- salt, pepper.
Instructions
- Heat a non-stick pan and wilt the spinach with a few drops of water until it reduces in volume.
- Remove the spinach and lightly scramble the eggs in the same pan with the olive oil.
- Warm the tortilla for a few seconds on each side.
- Assemble: tortilla base, scrambled eggs, wilted spinach, crumbled feta.
- Roll and cut in half diagonally for a nice presentation.
