Ingredients
- Eggs 2 pieces (approx. 100 g)
- Telemea 40 g
- Fresh spinach 40 g
- Tomatoes 120 g
- Wholemeal bread 60 g
- Olive oil 5 g
Instructions
- Wash the spinach and tomatoes well. Cut the tomatoes into slices or cubes, according to your preference, and lightly mash the telemeau with a fork.
- Break the eggs into a bowl and beat them gently until you get a homogeneous composition. Add the crumbled telemeau and mix gently.
- Heat a non-stick pan and add the olive oil. Add the spinach and leave for 1–2 minutes, just until it softens slightly.
- Pour the egg and telemea mixture over the spinach and cook over low heat until the omelette is set. You can fold it or leave it plain, depending on your preference.
- Serve the omelette with fresh tomatoes and wholemeal bread.
