Ingredients

  • eggs 2 pcs
  • cottage cheese 120 g
  • avocado 70 g
  • green salad 60 g
  • tomatoes 100 g
  • cucumber 80 g
  • olive oil 5 g
  • lemon juice 1–2 tsp, optional
  • salt
  • pepper

Instructions

  • Put the eggs in a kettle or pan of water and boil them for 6–7 minutes, so that the yolk remains soft.
  • Remove the eggs and run them immediately under cold water, then peel them and cut them in half.
  • Wash the lettuce, tomatoes and cucumbers. Tear the lettuce leaves and cut the vegetables as desired.
  • Peel the avocado and cut it into slices or cubes. If you like, sprinkle it with a little lemon juice.
  • Place the lettuce, tomatoes, cucumber, avocado and cottage cheese in a bowl or on a plate.
  • Add the soft-boiled eggs on top.
  • Drizzle the salad with olive oil, season with salt and pepper and serve immediately.
