Oatmeal and Blueberry Cottage Pancakes

Ingredients

  • ground oatmeal 40 g
  • cottage cheese 120 g
  • egg 1 pc
  • blueberries 100 g
  • ground flax seeds 10 g
  • butter 5 g
  • cinnamon, optional

Instructions

  • In a bowl, mix the cottage cheese with the egg until you get a homogeneous composition.
  • Add the ground oats and flax seeds, then mix well. If you want, you can add a little cinnamon for flavor.
  • Leave the composition for 2-3 minutes to bind easily.
  • Heat a non-stick pan and add the butter.
  • Form 2–3 small pancakes directly in the pan, using a spoon.
  • Cook them over medium heat for 2–3 minutes on each side, until they are lightly golden and well browned.
  • Serve the pancakes warm, with blueberries on top or on the side.
