Ingredients
- wholemeal bread 40 g
- avocado 70 g
- egg 1 pc
- lemon juice 1–2 tsp, optional
- salt
- pepper
- chilli flakes or seeds, optional
Instructions
- Heat a small saucepan of water. The water should be hot, but not boiling hot.
- Crack the egg into a cup or small bowl.
- Gently create a small swirl in the water with a spoon and drop the egg into the water. Cook it for about 3–4 minutes, until the egg white is well set and the yolk remains soft.
- Meanwhile, toast the slice of wholemeal bread.
- Mash the avocado with a fork or cut it into slices, then mix it with a little lemon juice, salt and pepper, if you like.
- Place the avocado on the toast, then top with the poached egg.
- Optionally, you can add some freshly ground pepper, chilli flakes or some seeds for extra taste and texture.
