Avocado toast and poached egg

Ingredients

  • wholemeal bread 40 g
  • avocado 70 g
  • egg 1 pc
  • lemon juice 1–2 tsp, optional
  • salt
  • pepper
  • chilli flakes or seeds, optional

Instructions

  • Heat a small saucepan of water. The water should be hot, but not boiling hot.
  • Crack the egg into a cup or small bowl.
  • Gently create a small swirl in the water with a spoon and drop the egg into the water. Cook it for about 3–4 minutes, until the egg white is well set and the yolk remains soft.
  • Meanwhile, toast the slice of wholemeal bread.
  • Mash the avocado with a fork or cut it into slices, then mix it with a little lemon juice, salt and pepper, if you like.
  • Place the avocado on the toast, then top with the poached egg.
  • Optionally, you can add some freshly ground pepper, chilli flakes or some seeds for extra taste and texture.
