Ingredients
- Eggs 2 pieces
- Cottage cheese 80 g
- Avocado 70 g
- Green salad 50 g
- Cucumber 80 g
- Tomatoes 100 g
- Olive oil 5 g
- Lemon juice 10 g
- Salt and pepper to taste
Instructions
- Boil the eggs until they reach the desired consistency, then leave them in cold water for a few minutes, peel them and cut them into halves or quarters.
- Wash lettuce, cucumbers and tomatoes well. Tear the salad into suitable pieces, cut the cucumber into slices, and the tomatoes into cubes or slices.
- Cut the avocado in half, remove the pit and scoop out the pulp with a spoon. Cut it into slices or cubes and sprinkle it immediately with a little lemon juice.
- Place the lettuce, cucumber, tomatoes, avocado and cottage cheese in a bowl or on a plate.
- Add the eggs on top, drizzle everything with olive oil and the remaining lemon juice, then season with salt and pepper to taste.
- Serve immediately as a light, balanced and filling meal.
