Ingredients

  • Eggs 2 pieces
  • Cottage cheese 80 g
  • Avocado 70 g
  • Green salad 50 g
  • Cucumber 80 g
  • Tomatoes 100 g
  • Olive oil 5 g
  • Lemon juice 10 g
  • Salt and pepper to taste

Instructions

  • Boil the eggs until they reach the desired consistency, then leave them in cold water for a few minutes, peel them and cut them into halves or quarters.
  • Wash lettuce, cucumbers and tomatoes well. Tear the salad into suitable pieces, cut the cucumber into slices, and the tomatoes into cubes or slices.
  • Cut the avocado in half, remove the pit and scoop out the pulp with a spoon. Cut it into slices or cubes and sprinkle it immediately with a little lemon juice.
  • Place the lettuce, cucumber, tomatoes, avocado and cottage cheese in a bowl or on a plate.
  • Add the eggs on top, drizzle everything with olive oil and the remaining lemon juice, then season with salt and pepper to taste.
  • Serve immediately as a light, balanced and filling meal.
