Poached eggs with avocado and tomatoes

Ingredients

  • eggs 2 pcs
  • avocado 70 g
  • tomatoes 120 g
  • wholemeal bread 40 g
  • lemon juice 1–2 tsp, optional
  • salt
  • pepper

Instructions

  • Put a small saucepan of water on the heat, but do not bring it to a strong boil. The water should be hot, with small bubbles, not boiling.
  • Crack each egg separately into a cup or small bowl.
  • Gently create a small swirl in the water with a spoon and add the first egg. Do the same with the second, if space allows, or cook them one at a time.
  • Leave the eggs poached for about 3–4 minutes, until the white is well set and the yolk remains soft.
  • Meanwhile, slice or mash the avocado lightly with a fork and toss with a little lemon juice, salt and pepper if desired.
  • Cut the tomatoes into slices or cubes, according to your preference.
  • Lightly toast the wholemeal bread.
  • Place the avocado on the bread or on the side, add the poached eggs and serve with the fresh tomatoes.
